Eat this on its own or spoon it over greens, chicken, or fish. The liquid that sweats out is delicious… use it! It makes a great dressing. Feel free to experiment with flavors like hot peppers or fresh herbs. The only rule to making this amazing salad is to finely dice the ingredients, so you can get the full flavor of each ingredient in every bite.
Ingredients

1 english cucumber, diced

4 fresh tomatoes, diced

2 bell peppers, diced

½ red onion, diced

1 lemon, juiced

½ tsp Himalayan pink salt
Directions
Combine all ingredients in a large mixing bowl. Sprinkle salt and lemon juice all over. Mix throughly and enjoy!
