Apple Almond Flour Cookies

  • 1 whole apple (small)

  • 1/3 cup blanched almond flour
  • ¼ tsp ground cinnamon

  • 1/8 tsp pink Himalayan salt

  1. Preheat the oven to 350°F. Line a cookie sheet with parchment paper.

  2. Prepare the apple: Scrub well if leaving the skin on, or peel it. Core and cut into small chunks.

  3. Puree the apple: Blend the apple in a food processor until smooth, scraping the sides as needed. Measure out 1/2 cup of apple puree and set aside.

  4. Mix the dough: In a medium bowl, combine almond flour, apple puree, cinnamon, and pink Himalayan salt. Stir until fully incorporated.

  5. Shape the cookies: Scoop small portions onto the lined baking sheet and flatten slightly.

  6. Bake for 15-18 minutes, or until golden brown and firm to the touch.

  7. Cool completely on a wire rack before serving.
