Betr Egg Nog

  • 2 cups soy milk (substitute with coconut milk for a creamier texture)
  • 3 egg whites
  • 5 drops liquid stevia (adjust according to taste)
  • 1/2 tsp vanilla extract
  • 1/4 tsp ground cinnamon

Directions

  1. In a saucepan, heat the soy milk (or coconut milk) over medium heat until it's warm but not boiling. Stir occasionally to prevent scorching

  2. While the milk is heating, separate the egg whites from the yolks. You can save the yolks for another recipe or discard them

  3. Once the milk is warm, gradually whisk in the egg whites, stirring continuously to prevent them from curdling. Cook for 2-3 minutes, stirring constantly, until the mixture thickens slightly

  4. Remove the saucepan from the heat and stir in the liquid stevia, vanilla extract, and ground cinnamon. Adjust the sweetness and flavor to your liking by adding more stevia or vanilla extract if desired

  5. Allow the Betr Egg Nog to cool slightly before serving. For a colder drink, refrigerate the egg nog for at least 1 hour before serving
