Cacao-Nut Truffles

Ingredients

  • 1 1/2 cups raw walnuts

  • 1 cup Medjool dates, pitted
  • 1 1/2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/8 tsp Pink Himalayan or grey salt (optional)

  • 1 tsp pure maple syrup or honey

  • 2 tbsp cacao powder

Directions

  1. Place the walnuts in a food processor and pulse until finely ground

  2. Add the pitted Medjool dates, vanilla extract, cinnamon, salt (if using), and maple syrup/honey to the food processor

  3. Process the mixture until it becomes a sticky dough, pausing to scrape down the sides as needed

  4. Add the cacao powder to the mixture and pulse until fully incorporated

  5. Scoop out small portions of the mixture and roll them into balls using your hands. The size of the truffles can be adjusted to your preference, but 1-inch diameter balls work well

  6. Place the truffles on a baking sheet lined with parchment paper

  7. Refrigerate for at least 30 minutes to firm up before serving

  8. For an extra touch, roll the chilled truffles in additional cacao powder or finely chopped nuts
