Ingredients

    • 1 lb. of boneless, skinless chicken breast (small cubes)

    • 3 green onions (thinly sliced)

    • 16 lettuce wraps

    • 2 tbsp of liquid aminos

    • 2 cloves of garlic (miniced)

    • 1/2 tsp of liquid Stevia

    • 1 tbsp of ginger (minced)

    • 4 tbsp of water

    • 1 tbsp of apple cider vinegar

    • Juice of 2 limes

    • (optional edamame, tomato or bell pepper for color and crunch)

    Directions

    1. Heat a splash of oil in your skillet over medium-high heat.
    2. Add your cubed chicken to the hot pan. Cook, stirring occasionally, for 5 to 7 minutes until the chicken is golden-brown on the outside and no longer pink on the inside (it should reach an internal temperature of 165°F / 74°C).
    3. Toss in your garlic, ginger, and any sauce ingredients. Cook for another 1 to 2 minutes until everything is fragrant and the chicken is beautifully coated.
    4. Scoop chicken mix into lettuce wrap and top with veggies listed above.
