Cottage Cheese "Bread"

Ingredients

  • 3 large eggs, separated

  • ½ cup plain cottage cheese* (blended until smooth)

  • ¼ tsp cream of tartar
  • ½ tsp pink Himalayan salt

Directions

  1. Preheat your oven to 325°F  and line a baking sheet with parchment paper.

  2. Separate the egg whites from the yolks. Place the egg whites in a clean mixing bowl and the yolks in a separate bowl.
  3. Add the cream of tartar to the egg whites and beat with a hand mixer or stand mixer until stiff peaks form.
  4. In the bowl with the yolks, mix in the blended cottage cheese and salt until smooth.
  5. Gently fold the egg white mixture into the yolk mixture, being careful not to deflate the whites.
  6. Spoon the batter onto the prepared baking sheet in small rounds or into a loaf pan for a more traditional bread shape.
  7. Bake for 25-30 minutes or until golden brown and set.
  8. Let cool before removing from the pan. Enjoy as is or lightly toasted.
