Beef and Eggplant Lasagna

I loved this meal and will reorder! It is warm, comfort and hit all the Italian flavor notes I love in one, simple to reheat dish. I opted to defrost and utilize the oven bake method on convection at 375F for 25min to reheat and it was excellent. I paired with a fresh spinach side salad. Bon appétit!
