Ingredients

  • 1 cup cooked black beans (rinsed and drained if canned)

  • 1/2 cup red bell pepper, diced

  • 1/2 cup cucumber, diced

  • 1/4 cup red onion, finely chopped

  • 1/2 cup shredded cabbage or romaine

  • 1/4 cup fresh cilantro, chopped

  • 1 tbsp lime juice

  • 1 tsp extra virgin olive oil or avocado oil

  • 1/2 tsp cumin
