Bok Choy Stir Fry

Ingredients

  • 2 heads bok choy, washed and chopped, white stems separated from leafy greens

  • 1 zucchini, sliced into halves or rounds

  • 1 small eggplant, diced

  • 1 bell pepper, diced

  • 1 small onion, sliced

  • 2 garlic cloves, minced

  • 1 tbsp ginger, grated

  • 2 tbsp avocado oil

  • 2 tbsp liquid aminos

  • red pepper flakes, to taste (optional)

Directions

  1. Prepare the ingredients: wash and chop the Bok Choy, separating the white stems from the leafy greens, slice the zucchini into rounds or halves, and dice the eggplant into bite-sized pieces. Slice the bell pepper and onion, mince the garlic, and grate the ginger

  2. In a large skillet, heat the avocado oil over medium-high heat

  3. Add minced garlic and grated ginger to the pan. Sauté for about a minute until fragrant

  4. Add sliced onion and bell pepper to the skillet. Stir-fry for 2-3 minutes until they start to soften

  5. Add the sliced zucchini and diced eggplant to the skillet. Stir-fry for another 3-4 minutes until they begin to soften and get lightly browned

  6. Drizzle liquid aminos over the vegetables. Add optional red pepper flakes for extra heat if desired. Toss everything together in the skillet

  7. Add the white parts of the bok choy to the skillet. Stir-fry for 2 minutes until they begin to wilt

  8. Add the leafy green parts of the Bok Choy to the skillet. Stir-fry for just a minute until the greens are wilted but still vibrant. Enjoy
