Cinnamon Roasted Sweet Potatoes and Apples

Ingredients

  • 2 medium sweet potatoes (about 1 pound), peeled and cut into 1-inch cubes
  • 2 medium apples, cored and cut into 1-inch cubes

  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 teaspoon pink Himalayan salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper

  2. In a large bowl, combine the cubed sweet potatoes and apples with the oil, cinnamon, nutmeg (if using), salt, and pepper, ensuring everything is evenly coated
  3. Spread the coated sweet potato and apple mixture on the prepared baking sheet in a single layer, avoiding overcrowding to ensure even browning
  4. Roast in the preheated oven for 25-30 minutes, or until the sweet potatoes are tender and slightly golden brown and the apples are softened
  5. Remove from the oven and let cool slightly before serving

Ridiculously good! Level 2 added 1T honey, butternut squash and walnuts at last 10 minutes.

Instead of coconut oil can I use olive oil or avocado oil.
