Dijon Roasted Vegetables

Ingredients

  • 2 whole fennel, cut into 1 inch chunks, discard the leafy greens

  • 4 whole bell peppers, cut into 1 inch pieces

  • 4 whole medium zucchini, cut into 1/2 inch pieces

  • 2 whole small red onion, cut into 1 inch cubes

  • 2 whole small sweet potato, cut into 3/4 inch pieces

  • 4 tbsp dijon mustard

  • 4 tbsp avocado oil

  • 4 tsp Italian seasoning

  • 4 tsps Himalayan pink salt

  • 1 tsp garlic powder

  • 1 tsp black pepper

Directions

  1. Preheat the oven to 400 degrees F. Cover two baking sheets with aluminum foil

  2. Chop all the veggies as listed and place in a large bowl, or into 2 large ziplock bags. Top with oil, mustard, and seasonings, then toss together or if using the ziplock bags, seal and shake

  3. Divide the vegetables evenly between the two baking sheets, and spread them into a single layer.

  4. Roast for 25 - 35 minutes. Toss the vegetables, rotate the pan 180 degrees, halfway through. The vegetables should be crisp and brown at the edges and tender inside. Enjoy warm or chilled
