Edamame Hummus

Ingredients

  • 12oz frozen shelled edamame

  • 1 garlic cloves, minced

  • ½ cup water

  • ½ cup cilantro, optional loosely packed

  • ¼ cup lemon juice

  • 1 tsp Himalayan pink salt

  • ¾ ground cumin

  • cayenne pepper, a pinch

Directions

  1. Place the edamame into a large pot and cover it with salted water

  2. Place over medium-low heat, and bring to a simmer. Cook until tender (about 5 mins). Drain

  3. Puree garlic in a food processor until minced. Add edamame, water, cilantro, lemon juice, salt, cumin, and cayenne; blend until smooth

  4. Serve blended as a cold snack, dip or side

I add a little paprika. Warm water will help make it really smooth.

How long in the fridge after you make the edamame hummus does it last?

Great for having with raw veggies! Rest of the family really enjoyed this when I spiced it up with a little more cayenne pepper. Since avocado/guacamole is a category IV food, this is the perfect alternative.
