Paradise Chicken

Ingredients

  • 4 chicken breast, organic, boneless, skinless

  • 3/4 cup balsamic vinegar

  • 3 cloves garlic, minced

  • 1/4 cup organic honey

  • 2 tbsp avocado oil

  • 2 tsp Italian seasoning, no salt added

  • 1/2 tsp Himalayan pink sea salt
  • 1/4 tsp ground black pepper

  • 2 each avocado, diced

  • 2 large organic tomatoes, seeds removed and diced

  • 1/4 cup fresh basil, chopped

Directions

  1. In a medium bowl or large ziplock bag, whisk together vinegar, honey, garlic, oil, Italian seasoning, salt, and pepper

  2. Add chicken and marinate, refrigerated, for at least 30 minutes

  3. In a small bowl, combine avocado, tomatoes, basil and an additional dash of salt & pepper

  4. Preheat grill to medium-low

  5. Grill chicken about 6 minutes on each side, or until juices run clear and there is no pink in the center

  6. Serve topped with avocado/tomato/basil mixture

Tasty recipe. The amount of marinade is a bit excessive. I used a half cup balsamic instead of 3/4 and double the chicken.
