Rainbow Slaw

Ingredients

  • 1/4 wedge of red cabbage
  • 1/4 wedge of white cabbage
  • 1 red beet

  • 1 golden yellow beet
  • 1 watermelon daikon radish (resembles a watermelon when cut open)
  • 1 stalk celery
  • 1 large or 2 small carrots* (Level 2 option)

  • 1/4 jicama
  • 1 greenhouse English cucumber (thin skin)
  • 1 green apple
  • 1 zucchini
  • Juice of 1 lemon
  • ½ cup of Citrus Salad Dressing/Vinaigrette

Directions

  1. Thinly slice the red cabbage and white cabbage into fine shreds

  2. Peel and grate the red beet and golden yellow beet

  3. Peel the watermelon daikon radish and thinly slice into rounds

  4. Slice the celery stalk thinly

  5. Peel and grate the carrots and jicama

  6. Slice the greenhouse English cucumber and zucchini into thin rounds or julienne strips

  7. Core and dice the green apple

  8. In a large bowl, combine all the prepared vegetables and fruits

  9. Pour the Citrus Salad Dressing/Vinaigrette over the Rainbow Slaw ingredients

  10. Toss the slaw gently to coat the vegetables and fruits evenly with the dressing

  11. Taste and adjust the seasoning or amount of dressing as needed

  12. Serve immediately as a vibrant and refreshing side dish, or refrigerate for an hour to let flavors meld before serving

The red beet turned everything red. We did not have yellow beets nor did we add the radishes or cucumbers. This made a massive bowl, probably 10 servings?
