Roasted Asparagus

Ingredients

  • 1 bunch asparagus spears
  • 1 clove garlic, minced
  • 1/2 teaspoon fresh parsley, chopped
  • 1/4 teaspoon dried oregano
  • 1-2 tablespoons avocado oil
  • pink Himalayan salt and pepper to taste

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup

  2. Wash the asparagus spears under cold water and pat them dry with a clean kitchen towel
  3. Trim the tough ends off the asparagus spears by snapping them off where they naturally break or by using a knife to cut off the woody ends
  4. Place the trimmed asparagus spears on the prepared baking sheet in a single layer
  5. In a small bowl, combine the minced garlic, chopped parsley, dried oregano, and avocado oil. Mix well to combine
  6. Drizzle the garlic and herb mixture over the asparagus spears, ensuring that they are evenly coated
  7. Season the asparagus with salt and pepper to taste, sprinkling the seasonings evenly over the spears
  8. Use your hands or a pair of tongs to toss the asparagus gently, making sure that they are well coated with the garlic and herb mixture
  9. Arrange the asparagus spears in a single layer on the baking sheet, making sure they are not overcrowded
  10. Place the baking sheet in the preheated oven and roast the asparagus for 12-15 minutes, or until they are tender and slightly caramelized, depending on their thickness
  11. Once roasted to your desired level of doneness, remove the baking sheet from the oven and transfer the roasted asparagus to a serving platter
