If you love Italian comfort food but are looking for a healthier alternative, zoodles and meatballs might just be your new go-to. Zoodles, or zucchini noodles, are a delicious and nutritious substitute for traditional pasta. Plus, zoodles are a great way to get an extra serving of veggies in your diet! So next time you're craving spaghetti and meatballs, give zoodles a try – you won't be disappointed.
Ingredients

1lb lean grass fed organic beef*

2 cloves fresh garlic, minced **

½ cup onion, diced**

3 tbsp herbs de providence, herb blend

2 zucchini
-
1 servng of Betr marinara (can be subbed with any other no sugar added marinara)

6 leaves fresh basil, chopped

3 tbsp hemp seeds
Directions
Warm skillet to medium-high heat
Spray with coconut oil spray or ¼ tsp of coconut oil. Make sure there are no propellants in the spray if chosen
Add garlic, onion, and herbs to the meat. Form into meatballs. Roll in the hemp seeds for an extra crunch and extra omega 3’s
Simmer meatballs in skillet for 10-15 minutes. In the meantime “spiralize” the zucchini (a handheld one can be purchased online or at Bed, Bath, and Beyond)
Add in level 1 marinara (or any other no sugar added marinara) to the skillet with the meatballs and simmer for about 5 minutes to bring out the sweetness of the sauce
Plate the zucchini noodles/“zoodles” and top with sauce and and meatballs. Garnish with chopped fresh basil and enjoy!
Recipe Note
*Can sub for bison as well.
**Can be substituted with 2tsp garlic/onion powder
Leftover Tip:
Save a serving of meatballs for later to help make meal prepping a breeze!
