Turkey and Vegetable Stir-Fry

Ingredients

  • 1 lb ground turkey
  • 1 tbsp avocado or coconut oil

  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets

  • 1 tbsp Bragg liquid aminos or coconut aminos

  • 1 tsp fresh ginger, grated
  • 1 clove garlic, minced
  • Himalayan pink salt and black pepper to taste

Directions

  1. Heat oil in a large skillet over medium heat, then add garlic and ginger and sauté for about 1 minute until fragrant

  2. Add ground turkey and cook until browned, breaking it up as it cooks
  3. Add onion, bell pepper, zucchini, and broccoli (or grated carrots) and continue to cook until vegetables are tender, about 5-7 minutes
  4. Stir in Bragg liquid aminos, salt, and pepper, cooking for an additional 2 minutes to blend flavors
  5. Enjoy!

Ground turkey flavor was a bit too strong. Will try ground pork or venison next time. Veggies tasted great in this light mix.
