Baked Cod

Ingredients

  • 4 filets of Cod, 1 inch thick

  • ½ tsp Himalayan pink salt

  • ½ tsp freshly ground pepper

  • 4 tbsp grapeseed oil or coconut oil

  • 1 cup cherry tomatoes

  • 2 lemons, 1 sliced and 1 juiced

  • 2 springs of fresh thyme

  • 2 tbsp fresh parsley

  • 2 cloves garlic, sliced

Directions

  1. Preheat the oven to 400° and pat cod filets with a paper towel until dry. Season all over with salt and pepper

  2. In a medium bowl, combine 3 tbsp oil, tomatoes, lemon slices, garlic, and thyme

  3. Brush a baking dish with oil. Pour tomato-oil mixture into dish, then nestle in cod

  4. Bake until fish is opaque and flakes easily with a fork, about 15 minutes.

I am going to try this for dinner tonight. I hope I will like it. I am not a big fish eater unless its fish sandwich, lol
