Baked Meatloaf

Ingredients

  • 1 white or yellow onion, diced or chopped

  • 1 cup organic low sodium beef broth

  • 1 red bell pepper, chopped

  • 2 cloves fresh garlic (minced)

  • 1 tsp ground black pepper

  • 1 tsp Himalayan pink salt

  • 1 tsp ground thyme

  • 1 tsp dried basil

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 lb organic grass fed ground beef or ground chuck

  • 1 egg

  • ¼ cup milled flaxseed

  • 1/2 cup tomato sauce with garlic and herbs, no salt or sugar added *

  • 1 cup Panko Bread Crumbs*, optional and finely crushed

Directions

  1. Preheat oven or air fryer to 350°

  2. Add broth or water to a skillet or frying pan over medium heat. Saute the onion, bell pepper, garlic, salt, pepper, thyme, basil, and oregano with the broth/water for about 10 minutes or until the liquid has evaporated. Remove from heat and cool to room temperature

  3. While the onion mixture is cooling, cover a jelly roll pan or other rimmed baking sheet with aluminum foil and lightly mist with avocado oil (non-aerosol)

  4. In a medium sized bowl, combine beef, egg, onion mixture, ½ of the tomato sauce and panko crumbs (if using)

  5. Mix well and form into one large or two smaller loaves and place on the foil line pan. Top with the remaining tomato sauce and place in the oven for about 35 minutes. Remove from oven and serve

I used flax seed meal and fresh lemon thyme with this recipe. I also crushed fresh tomatoes and used a little stevia with spicey mustard for the sauce on top. It turned out really good.

For some reason, the meatloaf was not well seasoned for me. Perhaps I’ll try the Panko next time & add more seasoning.

I also used gluten free panko bread crumbs. It didn’t stick well, but it was SO good! 10 out of 10. I made it with the Betr roasted radish which was also good.

I didn’t have flaxseed so used Panko. It didn’t stick together very well.
