Ingredients

2lb organic grass fed extra lean beef steak

2 red bell pepper, sliced

2 green bell pepper, sliced

1 large onion, sliced

1 tsp ground cumin

½ tsp Himalayan pink salt

½ ground black pepper

½ tsp cayenne

1 avocado oil

2 tbsp cilantro

1 lime
Directions
Cut beef into ¼ inch thick strips. Pre-heat skillet, and cook for about 2 minutes on each side or until slightly pink
In a separate pan, saute the peppers and sliced onions with seasonings until they are cooked but still slightly firm
Lay out the steak strips and place the cooked veggies perpendicular to them. Then, roll up the steak and use a toothpick to secure it

Put avocado, chopped onions, cilantro, and lime juice in a sealable bag. Squeeze and squish the bag until the ingredients are well mixed.Spoon the guac on the roll-ups and garnish with cilantro and lime as needed.
