When it's cold outside or you're feeling under the weather, nothing beats a steaming bowl of pho. But what if we told you that not only is this Vietnamese soup delicious, but it can also promote gut healing? That's right! Many of the ingredients found in pho have been shown to have gut-healing properties, aiding in digestion and reducing inflammation. Plus, with the addition of fresh herbs and jalapeños, you'll get a flavorful kick that's sure to brighten up even the gloomiest of days.
Ingredients

2 tbsp low sodium organic chicken stock

6 tsp liquid aminos

2 cinnamon sticks

2 skinless chicken legs, bone-in

1 cup radish sprouts

1 cup green onions, chopped

½ fresh cilantro leaves

3 leaves fresh basil

3 leaves fresh mint

32oz low sodium organic chicken stock

2 zucchini’s, spiraled

½ jalepeno pepper, diced (optional)
Directions
In a Crock-Pot, stir together the 2 tbsp chicken stock, liquid Aminos, and cinnamon sticks. Add chicken, radish sprouts, green onions, basil, mint, and cilantro. Add remaining chicken stock and, if needed, enough water to cover the chicken legs**
Cook on low for 6+ hours. Just pop it in before work and come home to the best Pho ever! The chicken will literally fall off the bones
Fish the bones out of the soup. If desired, serve on top of the spiraled zucchini and add additional healing herbs (cilantro, mint, and diced jalapeno). Enjoy!

**The magic here is in the bones! As the bones soak over time in a Crock-Pot, it will create a gut-healing, high-protein broth.
