Fiesta Chicken Stew

Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 2 tsp cumin
  • ½ tsp Himalayan pink sea salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 32 oz low-sodium chicken broth
  • 1 small sweet potato, diced
  • 1 cup diced bell pepper
  • 2 zucchini, diced
  • 1 bowl fresh pico de gallo (about 1 cup)
  • 1 cup fresh cilantro, chopped

Directions

  1. Mix the cumin, salt, pepper, paprika, and garlic powder in a small bowl.

  2. Combine the sweet potato, bell pepper, spices, and 1 cup of chicken broth in a Dutch oven or large soup pot. Bring to a boil, then reduce the heat to a simmer. Cook for about 20 minutes or until the vegetables are tender.
  3. Add the cooked chicken, diced zucchini, pico de gallo, and the remaining chicken broth to the pot. Stir to combine and let simmer for an additional 20–30 minutes.
  4. Serve hot, topped with fresh cilantro.

This is one of our favorite recipes. I make it weekly. I love all the spices and flavor.

Added some jalapeño for kick, a can of fire roasted tomatoes, and bak choy. It was very filling.
