Instant Pot Chicken Cacciatore

Ingredients

  • 4 chicken breasts, tenderized

  • 1 tsp Himalayan pink sea salt
  • 4 pinch ground black pepper, to taste

  • 1 tsp avocado oil

  • 1 clove garlic, peeled and crushed

  • 1 medium yellow onion, diced

  • 1 red bell pepper, diced

  • 8 oz organic tomatoes, crushed (no sugar added)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1 bay leaf

  • 1 tsp fresh basil or parsley, chopped

  • 2 zucchini spiraled for "noodles"

Directions

  1. Season chicken with salt & pepper

  2. Using saute' setting on the Instant Pot, add 1 tsp avocado oil and brown chicken on both sides; set aside

  3. Add the avocado oil to the pot and saute' garlic, onions and peppers until soft and brown, about 4-5 minutes

  4. Add chicken back into the pot and pour in tomatoes

  5. Add oregano, basil, bay leaf and stir

  6. Cook on high pressure for 30 minutes, natural release

  7. Serve over zucchini "noodles" topped with with fresh basil or parsley

I guess they mean comment when they say comment. Questions aren’t answered. You can cook this in a deep skillet or any pot that’s big enough. Any mixture of chicken pieces you choose. I’d add more garlic.

Can you do this in a slow cooker instead of an Instant Pot?

I believe we need at least 1 tablespoon of Avacodo oil to brown all 4 breasts. I cooked this in a skillet following the same instructions but simmering in the skilled with a lid for about 45 minutes. Turned out very tasty.

Can you do this without an instapot? And can you do it with chicken legs?
