Lemon Basil Cod with Asparagus

Ingredients

  • 1 bunch asparagus
  • 1/4 tsp Himalayan pink sea salt
  • Ground black pepper, to taste
  • 1 lb cod fillets
  • 1 tbsp fresh basil, chopped
  • 2 lemons (1 juiced, 1 sliced)

Directions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup

  2. Trim the woody ends from the asparagus spears and arrange them in a single layer on the prepared baking sheet. Sprinkle with Himalayan pink sea salt and ground black pepper to taste

  3. Place the asparagus in the preheated oven and roast for 10-12 minutes, or until tender but still crisp. Remove from the oven and set aside

  4. While the asparagus is roasting, prepare the cod fillets. Pat the cod dry with paper towels and place them on a separate baking sheet lined with parchment paper

  5. Season the cod fillets with Himalayan pink sea salt, ground black pepper, and freshly chopped basil. Drizzle the juice of one lemon over the seasoned fillets

  6. Arrange lemon slices on top of the cod fillets for extra flavor and presentation

  7. Transfer the baking sheet with the cod to the oven and bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork

  8. Once the cod is cooked through, remove it from the oven and serve immediately alongside the roasted asparagus

  9. Garnish with additional fresh basil and lemon slices if desired

This can be made with shrimp as well.

I used garlic powder, with the H salt and pepper. I make sure it flakes a bit. I probably cooked it a bit longer than mentioned. I did use lemon and basil. It wasn’t tough for me.

This was really bland. I would recommend using a lot more herbs. Also, needed a little more salt. I used frozen fish that I thawed which was way too chewy. I’m not real familiar with Cod, but perhaps it needs to be fresh and not previously frozen.
