Lemon Dill Chicken Salad

Ingredients

  • 1 whole pre-cooked rotisserie chicken or 3 cups of cooked chicken breast

  • ¾ tbsp fresh dill, roughly chopped

  • ½ lemon, zested and juiced

  • 2 pinches Himalayan pink sea salt

  • ¼ tbsp extra virgin olive oil

Directions

  1. Take out chilled pre-cooked rotisserie chicken and remove skin and remove meat from the bones. If you are using chilled boneless skinless chicken breast, just shred it as there isn't any skin to remove.

  2. Combine the chicken, olive oil, dill, lemon zest, lemon juice, and salt in a large bowl and mix well.

  3. Store in a sealed container in the refrigerator for up to 4 days.

How is this “chicken salad” without any creamy ingredients vs. just chopped up chicken with spices on it? The picture looks like there is Greek yogurt or something mixed in, but the recipe ingredients are just chicken, oil/lemon juice and spices. Just looking for feedback from anyone who has tried it.
