Mediterranean Chickpea Salad

Ingredients

  • 2 cans of chickpeas, rinsed and drained (or 3 cups cooked chickpeas)
  • 1 medium red bell pepper, chopped
  • 1 1/2 cups chopped fresh flat-leaf parsley (about 1 bunch)
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery, plus leaves (about 2 ribs)

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons lemon juice (from 1 to 1 1/2 lemons)
  • 2 cloves garlic, pressed or minced
  • 1/2 teaspoon Pink Himalayan salt
  • 1/2 teaspoon freshly ground black pepper

Directions

  1. In a large mixing bowl, combine the chickpeas, red bell pepper, parsley, red onion, and celery

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and black pepper

  3. Pour the dressing over the chickpea mixture and toss well to combine

  4. Adjust the seasoning with more salt and pepper if needed

  5. Let the salad sit for at least 15 minutes to allow the flavors to meld together before serving

Very tasty! I omitted parsley, for my personal preference. This is flavorful and crunchy.
