Poached Halibut

Ingredients

  • 1 cup low sodium organic vegetable broth
  • 2 lb halibut
  • 2 lemon (juiced)
  • 2 tbsp red onion (chopped)
  • 2 clove fresh garlic (minced)
  • 1/2 tsp fresh ginger
  • 1/2 tsp Himalayan pink sea salt
  • ground black pepper (to taste)

Directions

  1. Heat up the broth to a simmer in a small pan that has a secure cover

  2. Add fish, lemon juice, onion, garlic, and seasonings to the pan

  3. Cover and cook halibut in the simmering broth for 5-10 minutes until fish is tender when prodded with a fork and cooked through

  4. You can also wrap ingredients in aluminum foil, close tightly, and bake at 350° F for 10-15 minutes
