Quinoa Zucchini Fritters

Ingredients

  • 1/2 lb zucchini or 2 cups shredded
  • 1 large carrot or 1/2 cup shredded
  • 1/4 teaspoon pink Himalayan salt
  • 1 cup cooked quinoa
  • 2 eggs, lightly beaten
  • 1 tablespoon chives, chopped
  • 1 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup rolled oats
  • 1/4 cup avocado oil, for frying

Directions

  1. Combine the shredded zucchini, shredded carrot, and pink Himalayan salt in a large bowl. Let sit for 10 minutes, then squeeze out excess moisture using a clean kitchen towel or cheesecloth

  2. Add the cooked quinoa, beaten eggs, chopped chives, paprika, black pepper, and rolled oats to the bowl. Mix well until all ingredients are evenly combined
  3. Form the mixture into small patties, about 2-3 inches in diameter
  4. Heat the avocado oil in a large skillet over medium heat
  5. Fry the patties in batches, cooking each side for about 3-4 minutes or until golden brown and cooked through
  6. Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil
  7. Serve warm with your favorite dipping sauce or a side salad

Level 2 usually pushes for air frying.

Here’s the deal with those fritters:

The Method: The recipe uses a shallow pan-fry with ¼ cup of approved avocado oil.

Why it’s “L2”: This is considered controlled fat (not deep-frying) and is often needed to give fritters the right texture so they don’t fall apart.

🔥 If you want to stick to zero-added-fat: Just skip the pan-fry! You can use an air fryer instead with a quick mist of oil spray.

Since when are pan fried foods on L2. I thought they were supposed to be air fried.

This is labeled as a level 2 recipe, yet it contains rolled oats. I thought only steel cut oats were on level 2. Please clarify. Thank you.
