If you're in the mood for a refreshing and light dish, shrimp ceviche may be just what your taste buds need. This dish originated in Latin America and has since become a popular appetizer or main course in many restaurants across the world. And the good news is that it's quite simple to make at home! All you need are fresh shrimp, lime juice, cilantro, red onion, and tomato. The acidity from the lime juice "cooks" the shrimp, giving it a unique texture and flavor. Add in diced avocado for creaminess or jalapeños for a spicy kick.
Ingredients

1 lb shrimp, cooked and roughly chopped

2 cups pico de gallo

½ cup of fresh lime juice (1-2 limes)
Directions
Simply add the ingredients together, mix, and enjoy!

Variations
Use bay scallops in place of, or in conjunction with, shrimp. Traditionally ceviche is made with raw shrimp or fish- it’s “cooked” in the lime juice. If you’re feeling adventurous this way, you can add the lime to the shrimp and leave it overnight or until it’s opaque- like you can’t see through it.
