Shrimp Stuffed Tomato

Ingredients

  • 1 lb small (51/60) shrimp, cooked
  • 1 tbsp dried parsley
  • 1/2 lemon, juiced
  • 1/8 tsp Himalayan pink sea salt
  • 4 large tomatoes

Directions

  1. Begin by preparing the cooked shrimp if not already cooked. Peel and devein the shrimp, then cook them according to your preferred method. Once cooked, allow them to cool slightly

  2. In a mixing bowl, combine the cooked shrimp with dried parsley, freshly squeezed lemon juice, and Himalayan pink sea salt. Toss gently to coat the shrimp evenly with the seasoning mixture
  3. Carefully slice off the tops of the large tomatoes and discard them. Using a small spoon or melon baller, gently scoop out the seeds and pulp from the center of each tomato, creating a hollow cavity for the stuffing
  4. Stuff each hollowed-out tomato with the seasoned shrimp mixture, pressing gently to pack the filling
  5. Arrange the stuffed tomatoes on a serving platter or individual plates.
  6. Garnish the stuffed tomatoes with additional parsley or lemon wedges for a decorative touch, if desired
  7. Serve the Shrimp Stuffed Tomatoes immediately as a delightful appetizer or light meal
