Spanish Quinoa "Rice"

Ingredients

  • 1 tbsp avocado oil (or use 1/4 cup water)
  • 1 cup onion, diced
  • 1 red bell pepper, diced
  • 1 clove garlic, minced (or 1 tsp garlic powder)
  • 1 cup quinoa, uncooked and rinsed
  • 1 cup diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Pink Himalayan salt and pepper, to taste

Directions

  1. In a medium-sized pan, heat oil or water over medium-high heat
  2. Add onion and bell pepper and cook for 3 minutes
  3. Add quinoa and garlic, and stir frequently

  4. Cook for another 5 minutes or until quinoa turns slightly golden brown

  5. Add vegetable broth, tomatoes, oregano, salt, and pepper and stir

  6. Bring to a boil, cover the pot, reduce heat to low, and simmer for 15 minutes

  7. When done, remove the lid, fluff it with a fork, and let it sit for 10-15 more minutes

  8. Garnish with fresh herbs like parsley or cilantro, if desired
