Made with just a few simple ingredients, chia pudding is a creamy and satisfying dish that's perfect for starting your day off on the right foot. In the morning, top with your favorite fruits or nuts for a tasty and nutritious breakfast that will leave you feeling energized and ready to take on the day. Plus, chia seeds are full of fiber and omega-3 fatty acids, making this pudding not only tasty but also great for your body.

Ingredients
½ cup chia seeds
2 cups water
1 tsp vanilla extract
1 tbsp honey*
1 tsp cinnamon
Directions
In an airtight container, mix all ingredients for about 60 seconds
Let the mixture sit overnight in the refrigerator, or at least for 2 hours
To serve, scoop 1/4 cup of prepared Chia Pudding and add to a serving bowl. Top the pudding with 1/2 cup blueberries. and 1/2 cup chopped strawberries
Mix pudding with berries to coat evenly. Enjoy!

I used 1 cup water and 1 cup kefir, then added a little extra honey and cinnamon. It made it more creamy and delicious.

1/4 cup of this for 1 serving when portioning out is very small. For this to be equal to 4 servings it would have to be 1/2 cup of the chai pudding
The finished recipe image looks nothing like the end results. They must have used a cream or milk in that image. It did set up well and I used copious amounts of cinnamon since its better for lowering blood sugars. But next time I’ll follow the guidance of the community and use an unsweetened oat or almond milk.
